My Mother's favorite Tomato Relish:
From Okolona First Christian Church Cookbook: Pauline Stevens
Ripe Tomato Relish
12 or more small tomatoes
6 to 8 hot peppers
1 1/2 c. sugar
1 1/2 c. vinegar
3 or more bell peppers
6 or more onions
1 tsp. salt
Chop the peeled tomatoes, peppers, and onions. Add the sugar and vinegar. Cook until most of the liquid has cooked out; add salt. Cook about 1 more hour. Make as hot as you like.
